Apple and Flax
Pancakes

This recipe is one of many healthy items featured on the cafeteria menu at West Virginia University Hospitals in Morgantown, West Virginia. Cindy Gay, Registered Dietitian, Retail Manager, says her customers in the Health Sciences Center Cafeterias include health professionals and students who love products that are whole grain, low in fat, and have the extra health benefits.
1/2 cup whole wheat flour
3/4 cup all-purpose flour
1/3 cup ground flaxseed
3 tablespoons white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
dash ground nutmeg
6-1/2 tablespoons egg substitute
1-1/4 cups skim milk
1 cup pared and shredded apple
1. In large bowl, combine flours, flax, sugar, baking powder, salt, cinnamon, and nutmeg.
2. In separate bowl, beat together egg substitute and skim milk.
3. Add liquid ingredients to the dry and stir until just combined.
4. Add shredded apple to batter and fold in.
5. On hot griddle coated with non-stick spray, pour 1/3 cup on griddle.
6. Cook pancake until bubbles appear on surface, turn over, and brown other side.
